I recently acquired a book on local cuisine from Yamagata ✨. Based on the contents of this book, full of regional flavors, I would like our guests to enjoy new dishes. My grandmother, who is turning 100, was already absorbed in reading it! I myself was reminded of Ms. Hisako Furuta’s special “Rabbit Umami Hotpot,” from whom I received instruction . And, we also discovered a new dish for us called “Mongiri-mizu.” While feeling the changing of the seasons, we will add Yamagata’s charming regional dishes to our future menus.
