Sukiyaki made with Yonezawa beef, fluffy Japanese rolled omelet made with free-range eggs, richly flavored simmered dishes of butterbur and Japanese spikenard, crunchy pickled warabi fiddleheads, and creamy potato salad made with new potatoes .
